Apple puts a percentage on three of the 33 speedups in its iOS 27 list
Apple's iOS 27 list names 33 things that got faster. The one figure with a disclosed test method, 30 percent quicker app launches, came from Apple's own iPhone 11 Pro Max units compared against iOS 26.4.2.

A person holding an iPhone 11 at a locked door experiences the gap between tapping the badge and hearing the beep. Apple's list has an entry for that: faster and more reliable NFC reading [7]. Apple gives no number for it. Count the published entries and there are 33, three of them with a percentage attached and 30 described only as faster [11].
The three numbers are new-capture loading in Photos up to 70 percent faster, app launches up to 30 percent faster, and AirDrop transfers up to 80 percent faster, each hedged with "up to" [4]. The app-launch figure is the one with a disclosed method. According to 9to5Mac, Apple tested iPhone 11 Pro Max hardware, comparing one unit running iOS 26.4.2 against another running iOS 27 [5]. iOS 27 supports iPhones back to the iPhone 11, and Apple says some of its performance metrics come from testing on that lineup [6].
Measuring on the oldest supported hardware is the conservative choice, and it means the percentage is likeliest to hold on the phones your users actually kept. The comparison point is iOS 26.4.2, so a fleet parked on an older build has no stated before-figure [5].
When it announced iOS 27 in June, Apple said: "Improvements across platforms push key system capabilities forward so everyday tasks feel faster, smoother, and more enjoyable" [3]. A release note telling your support queue that Mail will stop crawling needs a number for Mail, and the list gives Mail message loading as faster [10].
Teams tell themselves that when a platform gets quicker, users open the app more often and run longer sessions that generate more events. Users faced with a slow tap tap again. Repeat taps inflate the same counters a team later reads as interest. The measures that move on a real latency win are the ones tied to completion: how many people finish first-run setup, how far into the library they scroll before backing out, how long from install to the first saved item.
Does the item sit on a path a user has to walk before getting any value (first-run pairing, first photo import)? And is there already a timing for it on a device you still support? Yes and yes is where a team would run a before-and-after this week, because the before number vanishes as soon as the fleet updates. Yes and no is the instrument-now set, where a team puts a timer in and reads it at the next point release. Where the answer to the first question is no, the improvement is free at whatever size it turns out to be, including the fourteen entries that touch Photos, Music, Freeform, Health and Spotlight [9].
9to5Mac reported that Apple did this performance work while shipping a ground-up revamp of Siri [13]. Its own take says most iPhone users "will notice a big improvement when they install iOS 27 later this year", in an article that opens by saying the release is available to everyone [12][1].
What to watch
- Whether Apple publishes test conditions or baseline timings for the 70% Photos and 80% AirDrop figures.
- Whether anyone posts independent before-and-after timings on iPhone 11 hardware rather than Apple's own numbers.
- Whether the app-launch gain still holds on an iPhone 11 after weeks of library growth and index rebuilds.
