The state's smallest winter wheat crop in six decades followed a freeze and then 32C two days later. Projections keyed to mean warming cannot represent that ordering, which is why volatility needs separate accounting.

The two readings bracket the problem: 12 hours of freezing weather [1], then 32.2C two days later [2]. That is a swing of at least 32 degrees inside roughly 48 hours [1], and the arithmetic mean of the two readings is 16.1C [6], a pleasant spring in eastern Colorado. Any statistic built on averages is invariant to the order temperatures arrive in. A growing-season mean would have logged that week as ordinary, which is the blind spot to hold onto when reading crop forecasts driven by mean warming: they are not measuring the mechanism that emptied these fields.
The thing the 73% does not tell you is tonnage. Poor and very poor are enumerator condition categories, not weighed yield [3], and the smallest-since-1965 line is Colorado Wheat's early estimate rather than a closed account [4]. Sixty-one seasons with no worse year [4] is a real statement about rarity. It is not a causal one. There is no counterfactual Colorado where the freeze did not happen, and the feature uses the state as an illustration rather than as an attribution study.
The nutrition half of the argument rests on different evidence and earns a different confidence. Atmospheric carbon dioxide has gone from a preindustrial 280 parts per million to above 420 ppm, about 50% higher, and all but the most optimistic scenarios reach at least 550 ppm by the end of the century, roughly 96% above preindustrial [5][6][2]. Crops grown at higher concentrations come back short of zinc, protein, magnesium and iron, through plant biology that is not yet fully understood [9]. That is a dose-response relationship rather than a weather event, and it accrues in seasons with no freeze at all.
The 2018 projection quoted in the piece sums to 297 million [7][3], but read it as 297 million deficiencies rather than 297 million people, since one inadequate diet can be short of both zinc and protein. The feature also flags its own confounder: crops are already less nutritious than in the 1950s, partly because breeding prioritised yield over nutrition [8]. That makes the long historical decline weak evidence for carbon dioxide specifically, and leaves the mechanism resting on controlled comparisons.
"There are real food security and nutrition concerns," Andrew Hultgren, an environmental economist at the University of Illinois, Urbana-Champaign, told Live Science, "especially under these high-warming futures" [10]. The sharpest of those effects land in less-developed regions where climate-related famine and nutritional scarcity are already occurring [14], not in a Colorado wheat belt with crop insurance and an export market. The two failure modes also differ in visibility. Variance appears as price spikes, thin shelves and per-customer purchase limits, the pattern bird flu produced in eggs [11]. Dilution appears in food that looks and costs the same.

Named experts, unnamed numbers
The quotations are solid and attributed — Hultgren on high-warming futures, Golden on algal blooms and spoilage. The numbers are weaker. The 73% poor-or-very-poor rating arrives with no rating body attached, the smallest-since-1965 claim is explicitly an early estimate rather than a final count, and the 2018 study behind the 175 and 122 million projections is dated but never named. Two decades of nutrition science and a century of CO2 trajectory rest on assertions a reader cannot follow to their origin.

Uptake is not a question this reporting reaches. The prose is careful — may, might, likely do a lot of work — but the span is enormous: one state's single season opens onto 297 million added nutrient deficiencies by 2050 and 550 ppm by 2100, both resting on uncited figures. The irony is that the best-evidenced item is also the least trumpeted. Freeze, then 32C, forty-eight hours apart, with a midpoint of 16.1C that no plant met: that is a real hole in average-based projection, and it is used as an anecdote rather than an argument.
The headline figure comes from the growers
The most quotable number in the story — smallest crop since 1965 — originates with Colorado Wheat, whose members gain when a bad season is visible to policymakers and insurers. That is not grounds for disbelief; it is grounds for wanting the final count. Live Science's own position matters too: 'Burning Up' is a commissioned series promising health impacts and promising solutions, which gives the outlet a standing reason to find the human-body angle in a weather event, and it duly does.
Direction firm, digits provisional
That Colorado had a very bad wheat year, and that elevated CO2 thins micronutrients in grain, are both safe to carry forward. The specific figures are not, yet: an early estimate is not a harvest, an unnamed 2018 study is not a citation, and with a single outlet in our coverage there is no second account to catch a transcription error. Treat the mechanism as reliable and every number as pending.
